Recipe from the Abbasid Period, A Pictorial History of Oil, by Philip Metres

Skin and clean a fat young sheep. Open
a port city to overseas guests
between two muscles and remove all that is

its stomach. In its interior, place
surveyors in exploratory khaki
a stuffed goose and in the goose’s belly

a stuffed hen, and in the hen’s belly
machine gun nests, C-rations, grenades,
a stuffed pigeon, and in the pigeon’s belly

a stuffed thrush, and in the thrush’s belly
contractual negotiations & subtle threats
another stuffed and fried bird, all of this

stuffed and sprinkled with sauce. Sew together
the indentured smile, dispatch handshakes, a contract,
and place the sheep in the hot clay oven

until done. Put the sheep into a calf, stitch together
this black slimy stuff, excretion of the body earth
until crispy on the outside, and ready for presentation.
